What is that fatty webbing wrapped around meat when cooking.?
I would like to find some for my Chistmas dinner. Since you can’t get a descent roast anymore with fat on it. They all dry out and are gross. So I would like to wrap this fatty webbing around the roast to keep it from drying out.
But I can’t think if the name of it, but where do I find it and about how expensive is it?
And do you think this would help keep my roast from drying out as I cook it.
The webbing is called ‘caul fat’. You should be able to get it at most butcher shops, maybe even in a good butcher section of a grocery store. I have no idea on the price, but it shouldn’t be that expensive considering most places just treat it as a by product and throw it out. It should help keeping your roast a little juicier.
Also you could try a technique called ‘larding’. It just means that you insert strips of fat into the roast itself to imitate marbling. A butcher might even do that for you if you ask them.
