I already know Merle Travis, Chet Atkins, Speedy West & Jimmy Bryant, Jerry Reed, Phil Baugh, Hank Garland, Joe Maphis…
On all of Brad Paisley’s albums, there is at least one instrumental piece included. However, on his 2008 album PLAY, there were 11 instrumental tracks. Some of those tracks on PLAY were country, some were rock, one was jazz and there were some other genres/sub genres included as well.
Some other artists who either only play/played country or play/played country and other genres and have numerous instrumental pieces include the following, in no particular order:
