I would recommend one of these two professions for rune-keepers:

Explorer (for money) so you can collect wood, ore and do some tailoring. Wood, Ore and boiling hides (forester) are good money-makers in the AH. This was the same in Shadows of Angmar. Same in Moria.

Tinker: specially for the Jeweller part since you can do you own runes. And you getthe plus of cooking food (though I prefer to buy it and not waste time on getting ingredients and cooking). The other good plus is you can create your own jewellery at all levels. These are a good sell on the AH too.
